Who doesn't love salsa? There is probably one person who doesn't love salsa. They suck and we hate them.This recipe is for a basic salsa cruda. If you need to categorize it any further, it is vegan, raw (minus the beans), very good and good for you.
Ingredients
3 cups rough chopped tomatoes
1/2 cup minced sweet pepper
2 T chopped jalepeno peppers
1/4 cup sweet corn kernels
1/4 cup cooked black beans
1 T chopped fresh garlic
2 T chopped cilantro leaves
1/2 cup chopped white onion
2 T balsamic vinegar
1 t red pepper flakes
1 t chili powder
1 t ground cumin
1 t ground black pepper
Instructions
Combine everything into a large salad bowl and gently toss until it's mixed and coated but not mushed. If you have mush, you've gone too far. Dump it into a sauce pan, cook it down into enchilada sauce, and start over. You can eat it as soon as you get it mixed up, but it is best if left in a lidded bowl in the fridge for at least an hour. Sitting overnight is even better. Eat with tortillas, chips, veggies, crackers, your hands, or your significant other's various body parts. When you've dispatched the solid bits, turn the bowl up and drink the juice. It will make you thank The Good Lord for sunshine and patio tomatoes.
